BrocADillas: The Best Veggie Quesadillas For Cinco De Mayo

I’m going to level with you guys.

I F**KING LOVE CINCO DE MAYO! And I am obsessed with mexican food.

So this Cinco De Mayo I was feeling a little crafty and concocted the ever beautiful…

the plant filled….

the one and only….

BROCADILLA!!!!

What’s in this sexy quesadilla or ‘brocadilla‘?

Broccoli, purple cabbage, jalapenos, red onion, and the best damn quinoa taco filling I’ve ever scarfed down in ma lifeeeee.

Oh and of course it’s all smothered in some delicious cashew queso.

This batch made roughly about 5 super loaded quesadillas- and there were all devoured in a matter of minutes….

I miss them already.

Seriously though ^^^ this was me and my gang after we realized they were all gone.

Make sure to enjoy every bite while they last haha!

Lets break this bad boy down step by step.

First let’s make sure you’re all set with ingredients.

Ingredient List For BrocADillas

  • 1 pack of tortillas (I used spinach wraps for mine! but whatever your preference is will work just fine!)
  • 1 jalopeno
  • 1 head of broccoli
  • 1 pkg of taco seasoning
  • 1 head of purple cabbage
  • 1 red onion
  • 1 pkg of quinoa
  • 1 cup cashews
  • 2 tablespoons tomato paste
  • 1 teaspoon tobasco
  • 1/2 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/3 cup nutritional yeast
  • 1/2 teaspoon pink Himalayan salt
  • 1 tablespoon lemon juice
  • Olive oil or non-stick cooking spray
  • 1 pck cheese (I’ve been sticking to daiya products lately!)

The Quinoa Filling

Ingredients:

  • 1 pack of tortillas (I used spinach wraps for mine! but whatever your preference is will work just fine!)
  • 1 jalopeno
  • 1 head of broccoli
  • 1 pkg of taco seasoning
  • 1 head of purple cabbage
  • 1 red onion
  • 1 pkg of quinoa

Method:

  1. Chop up 1 jalapeno, 2 cups of cabbage, 1/3 of a red onion & 1-2 heads of broccoli – set aside
  2. Prepare quinoa as directed on package (because I was tight on time I got a ‘Bake in the bag’ box of quinoa – only took me 15 minutes to prepare)
  3. Place pan on medium heat – allow a few minutes to warm up
  4. Add 1 TBSP olive oil to pan
  5. Add cooked quinoa, and a handful of jalapenos & red onion to pan
  6. Allow to cook for 5 mins stirring often
  7. Add in 1/4 of taco seasoning bag to mix (any more and the seasoning can become super over powering)
  8. Allow to crisp for an additional 3-5 mins
  9. Remove from pan

The Cashew Queso

While your letting your delicious quinoa seep in all of its delicious flavors you’re going to want to start mixing up your ingredients for the cashew queso.

Ingredients:

  • 1 cup cashews
  • 2 tablespoons tomato paste
  • 1 teaspoon tobasco
  • 1/2 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/3 cup nutritional yeast
  • 1/2 teaspoon pink Himalayan salt
  • 1 tablespoon lemon juice

Method:

  1. Allow cashews to soak in water for 2-3 hours
  2. Drain cashews and rinse
  3. Blend all ingredients into a high speed blender or food processor until smooth. If you use a food processor make sure to stop frequently while blending to scrape the sides of the machine down.

 

The Final Step

We are getting closer to getting this beautiful brocadilla in your lovely tummy. It’s worth the wait I promise!

TIP: Make double the batch to have leftovers for tomorrow….wish I had done this…

Now that you’ve got everything prepped it’s time to make some magic!

  1. Allow pan to preheat on medium for a few minutes
  2. Add tablespoon of olive oil to pan (don’t want these beauties sticking to the bottom of the pan!)
  3. Fold a tortilla in half on a separate plate. Load up the inside of your quesadilla as you see fit (I added in 1 layer of veg cheese as the base, then piled on 1 layer of quinoa filling, 1 layer of raw cabbage, 1 layer of raw brocolli, a few of the leftover chopped jalopeno bits, and a final additional layer of cheese at the top)
  4. Place quesadilla in pan
  5. Allow to sear for 2-3 minutes
  6. Flip quesadilla over
  7. Allow to sear for additional 2-3 minutes (could be more or less depending on how crispy you like your dillas! Just make sure to check on it often so you don’t burn em!)
  8. TA-DA
  9. Drown your crispy brocadillas in that lovely queso and go to town!
